Mango Chutney
4 lbs green mangoes
½ oz garlic
2 lbs raisins – stoned/chopped

½ oz ground ginger
1 lb onions
1 ½ lb brown sugar
½ tsp cayenne pepper
2 oz salt
3 pints vinegar
  1. Simmer the sliced and chopped fruit in 2 pints of the vinegar until it pulps.
  2. Add the remaining ingredients and vinegar.
  3. Simmer the whole for about an hour.
  4. When cold, bottle it and cover tightly.

It will improve by keeping.
