Guava Jam (Fay Anne de Freitas)
2 cups Guava
2 cups granulated sugar

2 limes
2 tbsp dry pectin
  1. Place guava in blender. Pulse until relatively smooth.
  2. Add the same amounts of sugar and guava mixture into a pot for boiling.
  3. Add the lime juice and pectin.
  4. Stir frequently on low heat and a roiling boil.
  5. Pour jam into sterilized jars and cap the jars with a vacuum cap.
  6. Place jars into boiling water covered by at least one inch of water for a few minutes.
  7. Remove and place on a towel to cool.
  8. Listen for the pop as each vacuum seal engages signifying an airtight seal. Re-use the outer ring only – discard the vacuum seal disk every time.
