Golden Cream Filling  – Very good (Delma Gomes from Noémi McCowan)
½ cup sugar
1 ½ cups milk

3 tbsp flour
2 egg yolks slightly beaten
¼ tsp salt
1 tsp vanilla
  1. Combine the sugar, flour and salt in the top of a double boiler.
  2. Add milk gradually, mixing thoroughly.
  3. Place over the boiling water to cook for 10 minutes, stirring constantly.
  4. Pour a small amount of the mixture over the egg yolks, stirring vigorously.
  5. Return to the double boiler and cook for a further 2 minutes, stirring all the time.
  6. Add the vanilla, cool and spread.
