Cantiloni (Fay Anne de Freitas) |
1 medium onion chopped 2 oz mushrooms sliced 1 oz lard 12 oz minced beef 1 oz butter
| 2 tbsp tomato puree 1 ¼ oz grated cheese 6 oz plain flour 1 egg
| 1 meat extract cube Oil for frying ¾ pint milk ½ pint water

- Bring the water to the boil and dissolve the beef bouillon cube.
- Fry the onions in the lard for 5 minutes. Remove from the heat and stir in the tomato puree, 1 oz of flour and the meat extract liquid.
- Add the sliced mushrooms, season to taste. Cover and simmer for 45 minutes.
- Pancakes: Sift 4 oz of flour into a bowl with a pinch of salt. Make a well in the centre and add the egg. Gradually stir in ¼ pint of milk and ¼ pint of water until the mixture is evenly distributed and smooth. Then beat well for 4 minutes.
- Heat oil in a pan and make 6 pancakes from the mix.
- Fill the pancakes with the mince mixture and line up on a dish.
- Make a white sauce with ½ pint milk, 1 oz butter and 1 oz flour, stirring until consistently thick with no lumps. Add 1 oz grated cheese and season with the nutmeg, salt and pepper to taste.
- Pour the sauce over the pancakes and sprinkle with the remaining grated cheese.
- Grill for 3 minutes until golden and serve immediately.
